Ingredients
500g Jersey Royal Potatoes
200g Asparagus
2 Salmon Fillets
Olive oil
Salt and Pepper
Dressing
2 tsp wholegrain mustard
2 tsp dijon mustard
2 tsp honey
1 Tbsp olive oil
2 Tbsp water
Handful of dill
Method
Firstly preheat your oven top 200°C and soft boil the potatoes for 10-15 minutes. The transfer to a roasting tin with the salmon and asparagus. Drizzle over the olive oil and sprinkle over salt and pepper and then bake for 20-25 minutes until salmon is cooked through. Meanwhile, mix together the dressing ingredients apart from the dill and drizzle over the salmon. Then sprinkle over the chopped dill and it’s ready to serve
