Smoothies are one of my favourite breakfasts as they are so quick and easy to make and if you are in a rush then you can take them with you. I think people often associate smoothies with being a light snack or a drink that you would have alongside a meal and I guess this is because most smoothies are just made with fruit and juices which makes them incredibly high in sugar but they don’t really leave you feeling full and satisfied. But this doesn’t have to be the case! I really love to add seeds such as hemp and flax, nut buttes and even avocado sometimes to add healthy fats. Oats as strange as it may sound can also be a really great addition as they contain slowing releasing carbohydrates and beta-glucan soluble fibre which has been shown to lower cholesterol levels, which helps to reduce the risk of heart disease. This smoothie also uses frozen summer berries rather than fresh berries to cut costs, make sure its a recipe you can make all year round and often frozen fruits and vegetables have more nutrients than fresh ones as they are frozen just after picking.
- 1 frozen banana
- 1 Cup frozen mixed summer berries
- 1 Tbsp flax seeds
- 1 Tbsp almond butter
- 300 ml coconut milk*
- Add all of the ingredients to a blender
- Pulse until smooth - adding a dash more coconut milk if needed.
