Honey Mustard Sausage Tray Bake
Ingredients
Serves 3-4 people
500g baby potatoes
400g brussels sprouts
6 sausage (or I used a vegan alternative!)
Olive oil
Salt and Pepper
Dressing
3 Tbsp Dijon Mustard
2 Tbsp honey
2 Tbsp olive oil
2 Tbsp water
Handful of thyme
Method
Firstly preheat your oven top 200°C and soft boil the potatoes for 10-15 minutes. The transfer to a roasting tin with the sausages and sprouts which have been chopped in half. Drizzle over half the olive oil and sprinkle over salt and pepper and then bake for 25-30 minutes until the sausages are cooked and everything is golden brown. Meanwhile mix together the dressing ingredients apart from the thyme and drizzle. Then sprinkle over the thyme and it’s ready to serve.
